Ingredients 

Main Ingredients

  • 4 large Russet potatoes baked
  • 1 medium Onion chopped
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Shredded cheddar cheese
  • to taste Salt and pepper
  • 4 slices Bacon cooked and crumbled
  • 2 tablespoon Chives chopped

Instructions 

  1. 1. Bake the potatoes until tender, about 45 minutes. Let cool, then peel and chop.
  2. 2. In a large pot, sauté the chopped onion until translucent.
  3. 3. Add the chicken broth and bring to a boil.
  4. 4. Add the chopped potatoes and blend the mixture until smooth.
  5. 5. Stir in the heavy cream and shredded cheddar cheese. Season with salt and pepper to taste.
  6. 6. Serve hot, garnished with crumbled bacon and chopped chives.
