Ingredients

  • 1 lb Asparagus trimmed and cut into 2-inch pieces
  • 8 oz Crab meat cooked and picked over for shells
  • 1 cup Cherry tomatoes halved
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper freshly ground

Instructions 

  1. 1. Bring a pot of water to a boil. Add asparagus and cook for 2-3 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
  2. 2. In a large bowl, combine asparagus, crab meat, and cherry tomatoes.
  3. 3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour dressing over the salad and toss gently to combine. Serve immediately.
