  • 4 cups Arugula fresh
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Parmesan cheese shaved
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • to taste Salt
  • to taste Black pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine the arugula and cherry tomatoes.
  2. Drizzle with olive oil and lemon juice.
  3. Toss gently to combine.
  4. Top with shaved Parmesan cheese.
  5. Season with salt and freshly ground black pepper to taste.
  6. Serve immediately.
